The bright blue-and-white decor, with tile trim and cane-back chairs, evokes the Mediterranean. You can choose between classic Greek dishes such as moussaka, souvlaki, or baked lamb, and creative ethnic mixes, such as Greek stir-fry (rice and veggies with feta cheese). Restaurants, bars, and lounges of varying formality and cuisine -- from coffeehouses to a grand dining room -- create a small culinary universe in this hotel in the heart of the Rockies. Samurai, a Japanese restaurant, may have the best food -- the standard of its sushi and shabu-shabu (thin strips of beef, chicken, or fish cooked in broth in a copper bowl and served with a choice of sauces) must be high enough to satisfy the hotel's large Japanese clientele. The best overall dining experience may be at the Waldhaus (lunch in summer only), where a raucous, popular, Bavarian-style sing-along follows a Bavarian-style meal. Fondues are a specialty, but the braised beef short ribs, duck with cider sauce, trout, and Wiener schnitzel are also popular. The Grapes Wine Bar, which serves a light-fare menu with adventurous salads, pâtés, and a choice selection of cheeses, is tucked away on the mezzanine level. Big windows provide nice views here. A summer highlight is the barbecue lunch on the Red Terrace. The savory barbecued entrées -- steaks, salmon, or chicken breast on salad -- seem greatly enhanced by the view of Rundle Mountain and the Bow River. One of Banff's best-kept secrets is the Golf Clubhouse Restaurant, with unparalleled mountain views on all sides. The Continental menu lists such delights as wild-mushroom terrine with a light chive dressing for an appetizer, and pepper-glazed pork tenderloin as an entrée.
